When I was younger, my parents would let me get away with not eating vegetables at all. And I guess that is why I didn’t develop my love for them. Now that I’ve grown up and have 2 kids of my own, even though I know I have to eat healthy (not just for myself but for my family as well), I just couldn’t bring myself to eat vegetables because I don’t like their taste (seriously, I think I sound like a kid). While I eat a few vegetables like spinach, cabbage, string beans, carrots, and squash, I find myself avoiding them whenever I can.
And because of that, I made it my top priority to get my kids to eat healthy. I always make sure that they eat enough fruits and vegetables every single day. In fact, I think I did really good because they would eat any vegetables (my daughter LOVES onions) and want fruits for dessert.
Of course, being a mom has its ups and downs. There are good days when everything seems to seamlessly work out fine; and then, there are bad days when nothing you do seems to be right at all. Although my kids have both been really good eaters since they were babies, of course, there have been days when they just don’t like their vegetables at all. These veggie-riched muffins are both made with fresh zucchini and carrots. Each muffin has 120 calories, 3 grams of fiber, and 5 grams of whole grain.
To enjoy these healthy muffins and get that freshly-baked taste, you can either microwave it while frozen for 35 seconds; or defrost it for 4 hours at room temperature then microwave it for 10 seconds.
How Does A Healthy Muffin Taste?
Both Garden Lites Chocolate and Blueberry Oat Muffins are delicious! They didn’t taste like they have any vegetables at all. You can definitely sneak these healthy muffins in to a diet of someone who doesn’t like their vegetables (like myself) and they won’t even notice at all. Not to mention that they’re so moist and smell really good, especially after being heated up!
Even though my daughter loves her vegetables and fruits, I struggle to get her to eat carbs. I know I can’t complain; but during breakfast and snack time, she’d only eat her fruits and won’t touch her bread. Sometimes she’d take a bite and that’s it. That has always been my problem with her. But when she tried these vegetable-rich muffins, she can’t stop eating them (especially the chocolate muffin). Can you imagine how delighted I must have been?
How Garden Lites Muffins Have Changed The Way We Eat Vegetables
There are mornings when we’re running late and I have to skip eating breakfast. I love how these veggie-rich muffins make it easily attainable for me to have a healthy breakfast even while on the go. I can simply grab a pack of my Garden Lites Muffins and eat it in the car on our way to drop the kids at school and to work.
I always make sure to pack snacks for my kids whenever we take them on a short trip; be it a trip to a nearby park or playground or when we visit my in-laws. And these grab and go muffins are the best alternative to the usual snacks that I always pack for them, which are crackers and cookies. What’s great about these is that they think they’re just simply munching on these delicious muffins.
